Grandmas sweet potato pie

Ingredients: -1 sweet potato, peeled and cubed -1/2 cup sugar -1/4 teaspoon cinnamon -3 tablespoons cornstarch -6 tablespoons unsalted butter, melted -1/2 cup all-purpose flour -1/4 teaspoon salt -1 cup milk -1 large egg -1/2 tablespoon lemon juice Instructions: 1. Preheat oven to 425 degrees F (220 degrees C). 2. In a large bowl, combine sweet potato, sugar, cinnamon, cornstarch and melted butter. Mix well. 3. In a separate bowl, whisk together flour and salt. 4. Pour the sweet potato mixture into a 9 inch pie plate. 5. Combine milk and egg in a small bowl; stir in lemon juice until well blended. Pour mixture over sweet potato mixture in pie plate. 6. Bake for 30 minutes or until pies are golden brown and a toothpick inserted into the center comes out clean.
